Fried Quail
Roll cleaned quail in seasoned flour. Fry in 1/2 inch hot oil until tender, turning once. Make gravy by adding flour to butter(1 tbsp. flour for every 2 tbsps. butter) and thin cream(1 cup cream to every tbsp. flour). Great over Rice!



  Dad's One & Only
~20-30 cleaned quail
(skinned not plucked!)
~Everglades Seasoning(may substitute seasoning of your choice)
~2 cups of flour
Sprinkle seasoning on birds. Coat each bird with flour. Drop in HOT grease. Fry until golden brown. Serve.

Not the most outlandish receipe but, a Southern favorite!
BEWARE-No One Can Eat Just One!!

Quail on the Bar-B!
~10 Quail
~20 slices of bacon
~1/2 cup butter or margarine
~Lemon Pepper
Stuff each quail cavity with butter. Sprinkle with lemon pepper. wrap 2 slices of bacon around each and secure with toothpick. place on grill until each is tender & brown.

You can also place these prepared quail in preheated oven(300 degrees), covered for about 30-45min. baking until tender, then broil until brown.

Roasted Quail
Season with Salt & Pepper. Melt Some butter in your baking pan and save some to pour on the quail. Take some thin strips of bacon and place over the birds. Put in hot oven and bake 15 minutes at 450. Cut temp back to 350 'til quail are chestnut brown. *If you want extra tender quail, baste several times with water & melted butter. Use some flour to thicken*
